Spinach pancakes with fresh fruit recipe
Ingredients
Ingredients for pancakes
- 100 g spinach
- 1 cup of milk
- 1 glass of water
- 1 cup wheat flour + 2 tablespoons flour
- 3 eggs
- 2 tablespoons butter
- a pinch of salt
Ingredients for the filling
- Vanilla cream cheese
- a glass of raspberries
- a glass of blueberries
Instructions
Preparing the pancake dough
Defrost the spinach leaves, place them in a blender container, add water and blend until smooth.
Pour flour into a bowl, add salt, blended spinach and milk. Mix everything until smooth with a mixer.
Add the eggs and melted butter and mix again into a smooth dough.
Heat a pancake pan, pour in a portion of the pancake batter and spread it over the entire pan. Cook over medium heat. This amount of batter will make about 6 pancakes.
Once the batter has set and is lightly browned, turn the pancake over using a wide spatula.
Cool the cooked pancakes before adding the filling.
Filling
Spread the prepared vanilla cream cheese on to the cooled pancake.
Add fresh raspberries and blueberries.
