Ingredients

  1. 500 g smoked lean bacon
  2. 500 g smoked country sausage
  3. 1 onion
  4. 1 carrot
  5. 1 parsley
  6. 0.5 celery
  7. a piece of leek
  8. 3 potatoes
  9. 2 cloves of garlic
  10. 500 ml of sour rye soup (ready-made rye sourdough)
  11. 2 tablespoons of sour cream
  12. 3 bay leaves
  13. 4 allspice
  14. pepper
  15. 1 tablespoon marjoram

Instructions

  1. Pour about 3 liters of water into a large pot and add the bacon cut into cubes. Set aside 2 tablespoons of bacon (you will need it at the end for frying). Place the pot over medium heat and cook for 15 minutes.

  2. Add peeled and chopped vegetables to the broth, mix everything together. Add salt to taste, as well as bay leaves and allspice. Cover the pot and cook the broth on low heat for about 1 hour.

  3. Then add the country sausage, cut into slices. Cook for another 10 minutes, until the sausage heats up and releases its flavor and aroma.

  4. Add marjoram and crushed garlic cloves to the soup. Gradually pour the ready leaven onto the żurek, stirring regularly and tasting to obtain the right level of sourness of the soup. Cook on low heat for about 10 minutes to allow the flavors to combine well.

  5. Finally, add 2 tablespoons of cream and mix well. You can temper the cream in a separate bowl by adding a little hot broth.

  6. Finely chop the onion and fry in a pan with the bacon.

  7. Serve the ready żurek soup hot with pieces of hard-boiled eggs and fried onion with bacon and fresh bread.
