Salad for Breakfast - Healthy, Quick and Tasty

A breakfast salad is a great choice for those who value healthy and filling meals in the morning. The combination of crispy, grilled halloumi cheese, creamy avocado, delicate rocket and spinach leaves and semi-soft-boiled eggs creates a tasty composition of flavors and textures. Recipe for breakfast salad
Ingredients
- 200 g halloumi cheese
- 2 eggs
- 2 handfuls of fresh spinach
- 2 handfuls of rocket
- 1 ripe avocado
- 2 lemon slices
- 2 tablespoons olive oil
- Salt and pepper
- a few radishes
Instructions
Boil the eggs until soft, placing them in boiling water for about 7 minutes. Then cover with cold water and set aside to cool. Once cooled, peel and cut in half.
Cut the halloumi into slices about 1 cm thick. Heat a dry grill pan or regular frying pan and fry the cheese for 12 minutes on each side, until golden and crispy.
Wash and dry the spinach and arugula. Peel the avocado, remove the pit and cut into thin slices. Cut the radish into slices.
Arrange the rocket and spinach mixture on plates. Top with avocado slices, radish slices, halved eggs and grilled halloumi.
Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
Serve immediately as a light, nutritious breakfast.
