Rugelach are traditional croissants originating from Jewish cuisine, characterized by delicate, shortcrust pastry and aromatic filling. Prepared from butter and cheese-based pastry, they are extremely buttery and soft inside, and thanks to plum jam they gain an exceptional taste. Rugelach cookie is not only a dessert, but also part of a rich culinary tradition, perfect as a sweet snack with coffee or tea. This recipe is a combination of simplicity of preparation with classic taste, which impresses with its versatility and elegance.

Dough ingredients

  1. 200 g butter
  2. 200 g cream cheese
  3. 350 g wheat flour
  4. 2 egg yolks
  5. 2 teaspoons vanilla extract
  6. 2 tablespoons powdered sugar for decoration

Filling

  1. a small jar of plum jam

Instructions

  1. Put the soft butter in a bowl with the cheese and vanilla sugar. Mix the ingredients with a mixer with a paddle until a uniform mass is formed. Add the yolks to the beaten mass, then gradually pour in the flour, constantly mixing or stirring until a smooth and uniform dough is formed.

  2. Divide the finished dough into 2 equal parts. Wrap each in cling film and refrigerate for about an hour so that the dough is well chilled and easier to roll out.

  3. After cooling, remove the first piece of dough from the refrigerator. Unwrap it from the foil and place it on a floured pastry board. Roll out the dough into a round cake of even thickness. Spread the surface of the rolled out dough with plum jam, leaving about 1 cm of free edge without filling.

  4. Cut the dough into equal-sized triangles, similar to slicing a pizza. Roll each triangle, starting from the semicircular base and working toward the tip, forming a croissant shape. Repeat with the remaining pieces of chilled dough.

  5. Place the finished croissants on a baking sheet lined with baking paper. Place the baking sheet with the croissants in an oven preheated to 180°C and bake for about 15-18 minutes, until lightly browned.

  6. Baked croissants cool on a wire rack. Perfect for serving with a cup of coffee or tea.
