Ingredients for pancakes
- 1 kg of potatoes
- small onion
- 2 flat tablespoons of wheat flour
- 2 eggs
- 1 flat teaspoon of salt
- 1 cup vegetable oil for frying
Preparation of pancakes
Peel the potatoes and then grate them on a fine grater. After grating the potatoes, leave them in a bowl for about 5 minutes and squeeze the potatoes thoroughly in your hands.
Add flour, finely grated onion, eggs and salt to drained potatoes. Mix all ingredients thoroughly to create a uniform potato mass.
Heat 0.5 litres of oil in a large frying pan over medium heat, so that it is hot but not smoking. Potato pancakes fry well and evenly in deep oil. Using a spoon, spoon portions of the potato mixture into the hot oil. Spread each portion of the mixture into a thin pancake, using a spoon to shape it. Fry the pancakes for about 2-3 minutes on one side, until golden and crispy. Then flip and fry for another 2-3 minutes.
Remove the finished pancakes from the pan and place them on a plate lined with paper towels to drain excess fat. Potato pancakes are best served straight from the pan, while they are still hot and crispy. They go perfectly with sour cream, mushroom sauce or sugar.
