Ingredients

Ingredients for poppy seed tops

  1. 300 g dry ground poppy seeds
  2. 1.5 cups of boiling water
  3. 8 eggs (whites and yolks separately)
  4. 220 g powdered sugar (120 g for the yolks and 100 g for the whites)
  5. 50 g ground almonds
  6. 5 tablespoons of semolina
  7. 1 flat teaspoon baking powder
  8. 2 teaspoons of almond oil

Ingredients for the punch

  1. 1/4 cup amaretto liqueur
  2. 1/4 cup water

Cake cream

  1. 300 ml double cream
  2. 300 g mascarpone
  3. 2 tablespoons powdered sugar
  4. a small jar of orange jam
  5. 1 teaspoon vanilla extract

Glaze and decoration

  1. 100 g white chocolate
  2. 50 ml double cream
  3. Candied or dried orange slices

Instructions

Preparing poppy seed tops

  1. Pour boiling water over the poppy seeds and leave for 1 hour. Squeeze out excess water in a cloth. When the poppy seeds have cooled completely, add the ground almonds, semolina and almond oil.

  2. Beat 8 egg yolks with 120 g of icing sugar until fluffy. Add to the poppy seed mixture and mix.

  3. Mix the remaining 8 egg whites with 100 g of powdered sugar until stiff and carefully combine with the poppy seed mixture.

  4. Bake in a cake tin with a diameter of: 24 cm. Bake the poppy seed cake at 175°C - approx. 45 minutes, top and bottom heating. After baking, open the door and leave to cool.

  5. Cut the cooled cake into three layers of the same thickness. If the poppy seed cake is baked the day before, it will be easier to cut.

Punch preparation

  1. Combine amaretto liqueur and water. Soak poppy seed layers with the resulting doughnut.

Preparation of the cream

  1. Mix together cold cream and cold cheese with added sugar and vanilla extract. Halfway through mixing, when the ingredients start to combine, add cream fix and mix gently, then mix until creamy.

  2. Place 2-3 tablespoons of orange jam on each of the bottom two layers and sandwich them with the resulting cream.

  3. Top and sides of the cake finish with a thin layer of cream, it doesn't have to be exact. The whole charm of the cake is in the visible layers of poppy seeds.

Preparing the white chocolate icing

  1. Heat the cream in a pot, do not boil. Add the very finely chopped chocolate to the hot cream. Wait a minute for the temperatures to even out and mix thoroughly. Pour over the cooled cake.

  2. Garnish with candied orange slices. Alternatively, you can substitute candied orange peel.

  3. Sprinkle the cake with some poppy seeds
