Ingredients

- 300 g biscuits
- 100 g butter
Ingredients for the cheesecake mass
- 1 kg cream cheese
- 150 ml double cream
- 1/2 cup powdered sugar
- 2 tablespoons of potato flour
- 4 eggs
- 250 g sweet pistachio paste
Decoration
- 100 g chopped unsalted pistachios
- Optional: green food coloring
Instructions
Preparing a crispy base
Crush the biscuits finely and mix with the soft butter to form a uniform mass. Then spread it over the bottom of a 23 cm cake tin and the sides. Put in the fridge for 30 minutes to set.
Preheat the oven to 160°C, using top and bottom heat, and bake the cake for about 10 minutes.
Preparation of cheesecake mass
When preparing pistachio cheesecake, it is a good idea to start by removing the cottage cheese and eggs from the fridge so that they can warm up to room temperature.
Place the cream cheese, sugar and flour in the mixer bowl. Mix on low speed until smooth. Then add the eggs one at a time and mix.
Add the pistachio paste and cream to the cheese mixture and mix gently until the ingredients are combined.
Add a pinch of natural food coloring, which will give the cheesecake an intense color. This step can be skipped.
Preheat the oven to 160°C, using top-bottom heat without convection. Place an ovenproof dish filled with boiling water on the bottom of the oven, which will prevent the cheesecake from cracking and give it a velvety texture.
Pour the cheese mixture into the prepared cake tin and bake in the oven for about 70 minutes, depending on the size of the tin. After baking, the center of the cheesecake should remain slightly loose. Cool the cheesecake in the tin, then chill in the refrigerator for a few hours, uncovered, to set.
Before serving, garnish the cheesecake with chopped, unsalted pistachios to enhance the flavor and add crunch.
