Pistachio cake with white chocolate glaze

Ingredients
Dough ingredients
- 200 g butter
- 150 g powdered sugar
- 4 eggs
- 100 g wheat flour
- 200 g ground pistachios
- 100 g whole pistachios
- 100 g sour cream
- 2 teaspoons baking powder
Glaze ingredients
- 100 g white chocolate
- 2 tablespoons butter
Instructions
Preparation of pistachio cake
Warm all ingredients to room temperature. Shell pistachios and grind 200 g in a food processor or coffee grinder.
Place butter and sugar in a mixing bowl and beat until light and fluffy. Add eggs one at a time, beating after each until combined.
Pour ground pistachios into a bowl. Then sift wheat flour, baking powder. Add sour cream and mix with a spatula, just until ingredients are combined. Do not mix too long, so that the dough does not lose its lightness.
Grease a loaf pan or cake tin with butter and sprinkle with wheat flour, shaking off excess flour. Transfer the dough to the tin, level the surface.
Bake in an oven preheated to 170ºC (no fan) for 45 minutes or until a toothpick inserted into the cake comes out clean. After baking, let the cake cool slightly in the tin, then remove it to a plate and leave to cool completely.
Preparing the icing
Put the butter in the microwave and melt. Add the chocolate, chopped as finely as possible, to the hot butter. Wait a minute for the chocolate to reach the temperature of the butter, then mix well until dissolved and the ingredients are combined. Pour over the cooled pistachio cake and sprinkle with chopped pistachios.
