Ingredients

  1. 1 medium zucchini
  2. 1 medium carrot
  3. 10-12 cherry tomatoes
  4. 1 clove of garlic
  5. 2 tablespoons olive oil
  6. 80g feta cheese
  7. salt and freshly ground pepper to taste

Instructions

  1. Wash the zucchini and carrots, peel the carrots, and then use a vegetable sharpener (or spiralizer) to prepare vegetable noodles.

  2. Halve the cherry tomatoes. Heat olive oil in a pan, add the tomatoes and fry for a few minutes until slightly softened and juice released. Add the vegetable pasta and garlic, fry for 4 minutes, only until slightly heated, the vegetables should remain firm.

  3. Season with salt and pepper to taste. Transfer to plates and sprinkle with crumbled feta cheese.
