Ingredients
- 1 medium zucchini
- 1 medium carrot
- 10-12 cherry tomatoes
- 1 clove of garlic
- 2 tablespoons olive oil
- 80g feta cheese
- salt and freshly ground pepper to taste
Instructions
Wash the zucchini and carrots, peel the carrots, and then use a vegetable sharpener (or spiralizer) to prepare vegetable noodles.
Halve the cherry tomatoes. Heat olive oil in a pan, add the tomatoes and fry for a few minutes until slightly softened and juice released. Add the vegetable pasta and garlic, fry for 4 minutes, only until slightly heated, the vegetables should remain firm.
Season with salt and pepper to taste. Transfer to plates and sprinkle with crumbled feta cheese.
