Delicate chicken tenderloins, sautéed in butter, are combined with aromatic garlic, cream and fresh spinach, which adds lightness and colour. Ingredients

  1. 400 g penne pasta
  2. 400 g chicken tenderloin
  3. 1 tablespoon butter
  4. 1 tablespoon olive oil
  5. 1 clove of garlic
  6. 200 g fresh spinach (or frozen in leaves)
  7. 1 cup of cream 18%
  8. about ¼ cup of pasta cooking water
  9. 34 tablespoons grated parmesan
  10. salt and freshly ground pepper to taste

Instructions

  1. Cook penne in salted water until al dente according to package directions. Drain, reserving about ¼ cup of the cooking water.

  2. Finely chop the chicken tenderloins, season with salt and pepper, then fry in butter and olive oil in a large pan until golden brown and soft in the middle. Set the fried chicken aside.

  3. In the same pan, add a crushed garlic clove, fry briefly, then add finely chopped fresh spinach. Stew the spinach for a few minutes until it wilts and reduces in volume.

  4. Pour 18% cream into the pan and add the reserved pasta cooking water. Combine the ingredients and boil until you get a sauce.

  5. Add fried chicken and cooked pasta. Mix everything thoroughly. Finally, sprinkle the dish with grated parmesan and optionally season with freshly ground pepper.
