Pasta with Chicken and Spinach

Pasta with chicken and spinach recipe
Ingredients
- 400 g penne pasta
- 400 g chicken tenderloin
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 clove of garlic
- 200 g fresh spinach (or frozen in leaves)
- 1 cup of cream 18%
- about ¼ cup of pasta cooking water
- 34 tablespoons grated parmesan
- salt and freshly ground pepper to taste
Instructions
Cook penne in salted water until al dente according to package directions. Drain, reserving about ¼ cup of the cooking water.
Finely chop the chicken tenderloins, season with salt and pepper, then fry in butter and olive oil in a large pan until golden brown and soft in the middle. Set the fried chicken aside.
In the same pan, add a crushed garlic clove, fry briefly, then add finely chopped fresh spinach. Stew the spinach for a few minutes until it wilts and reduces in volume.
Pour 18% cream into the pan and add the reserved pasta cooking water. Combine the ingredients and boil until you get a sauce.
Add fried chicken and cooked pasta. Mix everything thoroughly. Finally, sprinkle the dish with grated parmesan and optionally season with freshly ground pepper.
