Pasta with Asparagus and Bacon

Pasta with asparagus and bacon is a real feast on a plate – easy to prepare, seasonal and full of flavour. Crispy green asparagus, aromatic garlic, browned bacon and creamy parmesan create a combination that is hard to beat. A few tablespoons of pasta cooking water create a natural, light sauce that perfectly combines all the ingredients. This dish tastes like something from a good Italian trattoria, but you can easily make it at home in 20 minutes.
Recipe for pasta with asparagus and bacon
Ingredients
- 200g linguine pasta
- 1 bunch of green asparagus
- 150 g bacon (preferably sliced)
- 1 clove of garlic
- 2 tablespoons olive oil
- 4 tablespoons grated parmesan
- 2 tablespoons chopped parsley
- freshly ground pepper to taste
Preparation
Cook linguine al dente in salted water according to package directions. Drain, reserving a few tablespoons of the cooking water.
Break off the tough ends of the asparagus, cut the rest into smaller pieces or leave them whole. Heat the olive oil in a pan and fry the asparagus for a few minutes, until they are soft but still slightly crispy. Set the asparagus aside.
In the same pan, fry the bacon slices cut into smaller pieces along with the finely chopped garlic. When the bacon is browned, add a few tablespoons of the hot pasta cooking water to gently combine the flavors.
Add cooked pasta and sautéed asparagus. Mix everything thoroughly in the pan. Finally, sprinkle with grated parmesan, chopped parsley and season with freshly ground pepper to taste.
