Mimosa stuffed eggs

Stuffed eggs mimosa is an elegant snack originating from French cuisine, which delights with its delicate taste and unique appearance. Recipe for stuffed eggs mimosa
Ingredients
- 10 eggs
- 8 teaspoons of mayonnaise
- 1 teaspoon mustard
- 1 tablespoon fine chives
- salt and pepper
Instructions
Hard-boil the eggs, immediately cover them with cold water after cooking, which will make them easier to peel. When the eggs have cooled, carefully peel them, making sure that the whites remain intact.
Cut each egg lengthwise into two equal halves using a sharp knife. Remove the yolks from the whites, trying to keep the whites in perfect condition. If any of the eggs cracked during cooking or cutting, they can be used to prepare additional filling. Set aside two yolks, they will be needed for decoration.
Transfer the remaining yolks to a bowl and mash with a fork until a fine, uniform mass is formed. To obtain a perfectly smooth filling, it is worth spending a few minutes to finely chop the yolks. Add mayonnaise, mustard and spices to the yolks, a pinch of salt and freshly ground pepper. Mix everything thoroughly until a creamy mass with an intense flavor is formed. Finally, add finely chopped chives, which will give the filling freshness and color, and mix again.
Place the egg white halves on a platter or decorative plate, then fill each with the prepared filling. Grate the previously set aside yolks on a fine grater, obtaining a delicate dust of mimosa flower, which should be sprinkled on top of the stuffed eggs, giving them an attractive appearance.
Chill the cooked eggs in the fridge for about 30 minutes before serving so that the filling sets slightly and the flavours can blend better. Stuffed eggs are an elegant and tasty snack, perfect for holiday tables or family parties.
