Mayonnaise cake with lemon flavor

Recipe mayonnaise cake
Ingredients
- 1 cup mayonnaise
- 3/4 cup of sugar
- 1 teaspoon vanilla extract
- 5 eggs
- grated peel of half a lemon
- 2 teaspoons baking powder
- 120 g wheat flour
- 120 g potato flour
Instructions
Remove the mayonnaise and eggs from the refrigerator in advance to allow them to reach room temperature.
Separate the egg whites from the yolks. Beat the egg whites with a mixer at medium speed until they start to foam and become almost stiff. Then, gradually add the sugar and vanilla sugar, mixing constantly until the mixture becomes shiny and stiff. Add the yolks to the beaten egg whites and continue to beat. Add the lemon zest and beat until the ingredients are combined.
In a separate bowl, sift together the wheat flour, potato flour and baking powder. Mix the dry ingredients thoroughly. Gradually add the mixture to the beaten eggs, mixing at minimum speed until smooth. Finally, add the mayonnaise and mix gently to obtain a uniform consistency.
Grease the cake tin and sprinkle with flour to prevent the dough from sticking. Transfer the mixture to the tin, smooth the surface and place in a preheated oven. Bake at 180 C for 45 minutes, until the cake is golden and a toothpick inserted into the middle comes out clean.
After baking, leave the cake in the form for a few minutes, then remove and cool on a rack. The cake is ready to serve.
