Ingredients
- 400 g type 00 flour
- 4 eggs
- a pinch of salt
Instructions
On a clean countertop or pastry board, make a mound of flour. Make a well in the middle and crack the eggs into it. Using a fork or your hands, beat the eggs, gradually drawing in the flour from the edges.
Once the ingredients are combined, knead the dough vigorously and thoroughly with your hands until it is smooth, elastic and compact, about 10 minutes. If necessary, add a little flour if the dough is sticky, or a drop of water if it is too dry. Wrap the finished dough in plastic wrap and leave to rest at room temperature for at least 30 minutes.
After resting, divide the dough into 2-4 parts. Roll each out thinly by hand or using a pasta machine, gradually reducing the thickness. Cut out any shape from the resulting sheets: fettuccine wide ribbons, tagliatelle classic pasta strips.
Lightly sprinkle the finished pasta with flour and leave for a few minutes to dry.
Pour water into a large pot (about 4 liters), add a good pinch of salt and bring to a boil. Throw the pasta into the boiling water and cook for 2-3 minutes, until al dente (the time depends on the thickness of the dough). Drain and immediately combine with your favorite sauce.
