  1. 300 g wheat cake flour
  2. 250 g Greek yogurt
  3. 4 eggs
  4. 2/3 cup vegetable oil
  5. 1/2 cup powdered sugar
  6. 2 teaspoons of vanilla extract
  7. 2 teaspoons baking powder
  8. 1 teaspoon of lemon oil

Instructions

  1. Place the sugar and eggs in a mixer bowl and beat at high speed until the sugar is completely dissolved and the mixture is thick and light. Gradually pour the oil into the fluffy egg mixture in a thin stream, stirring constantly. After adding the oil, turn off the mixer.

  2. Add natural yogurt and lemon oil to the mixture. Mix the ingredients gently with a spatula, taking care to maintain a fluffy consistency.

  3. In a separate bowl, sift together the cake flour and baking powder. You can also mix the flour and baking powder thoroughly using a kitchen whisk.

  4. Add the flour and baking powder to the egg-yoghurt mixture in batches, mixing gently until all the ingredients combine into a uniform dough.

  5. Grease the cake tin thoroughly with soft butter or oil, making sure to cover all the nooks and crannies, including the chimney of the tin. Sprinkle the inside with breadcrumbs and pour out the excess.

  6. Pour the batter into the prepared tin and bake in an oven preheated to 175°C. After about 40 minutes, check the degree of baking by slightly opening the oven door and inserting a wooden stick into the center of the cake. If the stick comes out dry, it means the cake is ready. Cool the finished cake in the tin, then carefully remove it and sprinkle with powdered sugar.
