Ingredients for gingerbread cookies
- 1/2 kg flour
- 1 teaspoon cocoa
- 1/2 teaspoon of soda
- 1 pack of gingerbread spice
- 100 g butter
- 100 g sugar
- 4 tablespoons of honey
- 1/2 cup milk
- 1 egg
- a pinch of salt

- 1 egg white
- 1 cup powdered sugar
- 1 tablespoon lemon juice
- food coloring (powder)
Instructions
Gingerbread dough
In a small saucepan, melt the butter, honey, powdered sugar, salt, spices, and cocoa over low heat. Heat until combined, but do not boil. Cool.
In a large bowl, sift flour and baking soda. Mix thoroughly.
Add the cooled honey mixture and eggs to the dry ingredients. Knead everything together until you have a smooth, elastic dough. If the dough is too sticky, you can add a little flour.
Form a ball of dough, wrap in plastic wrap and chill in the fridge for at least 30 minutes. The dough will be easier to roll out.
Preheat oven to 180°C (top and bottom). Roll out the chilled dough on a floured pastry board to a thickness of about 3-5 mm. Use cookie cutters to cut out gingerbread cookies in various shapes.
Place the cut gingerbread cookies on a baking sheet lined with baking paper, leaving some space between them. Bake in a preheated oven for 8-10 minutes, until the edges begin to brown slightly. Once baked, cool on a wire rack.
Preparing the icing
Mix egg whites, add icing sugar and lemon juice one spoon at a time. Add enough sugar until you get the right consistency. Depending on whether you want the icing to be more liquid or thick.
Divide the icing into several small bowls, add a little food coloring and mix well.
Once the gingerbread has completely cooled, decorate it with icing and any sprinkles you like. You can use colored icing, chocolate or sugar pearls to give the gingerbread a festive touch.
Store in an airtight container.
