Farfalle pasta with basil pesto

Farfalle pasta with pesto - Recipe
Ingredients
- 400 g of farfalle pasta
- 25 g fresh basil leaves (approx. 1 pot)
- 3 tablespoons of pine nuts, previously browned in a dry pan
- 4 tablespoons grated parmesan
- 80 ml extra virgin olive oil
- sea salt and freshly ground black pepper to taste
Additionally
- 2 tablespoons pine nuts
- 2 tablespoons of parmesan cheese
- a few basil leaves
Preparation
Cook the farfalle pasta al dente in salted water according to the package instructions. Drain, reserving a little of the cooking water.
In the meantime, prepare the pesto: Place the basil leaves, garlic, browned pine nuts and grated parmesan in a blender jug. Add the olive oil and blend until smooth. Season the pesto with sea salt and freshly ground pepper.
Mix cooked pasta with prepared pesto, adding 1-2 tablespoons of pasta cooking water if necessary to make the sauce more velvety. Serve immediately, optionally sprinkling with additional parmesan, nuts and basil leaves.
