Ingredients for the Passover cake

  1. 1 kg cream cheese
  2. 200 g butter
  3. 1 cup powdered sugar
  4. 1 tablespoon vanilla essence
  5. 1 teaspoon grated orange peel
  6. 5 egg yolks
  7. 100 g fried orange peel
  8. 100 g unsalted pistachios

Preparation of the Easter Passover

  1. Remove the butter, eggs and cheese from the fridge in advance to reach room temperature. This is crucial for the ingredients to combine easily and for the mixture to be uniform. Place the soft butter in a large bowl and beat with the icing sugar using a mixer on medium speed. Continue beating until the mixture is fluffy and light. This process requires patience, but it is crucial for the lightness of the Passover.

  2. Add one egg yolk at a time to the whipped butter mass, stirring constantly, mixing thoroughly after each one, so that it is well combined with the cream. Then add the ground cottage cheese, in portions, and mix at low speed until a smooth and creamy cheese mass is created.

  3. Divide the mixture into two parts and place them in two bowls. Add vanilla extract and chopped pistachios to one, and grated orange peel and candied orange peel to the other. Mix both mixtures thoroughly.

  4. To prepare Passover, choose a large sieve with a diameter of at least 20 cm, it can be cone-shaped or round. Place the sieve on a deep bowl that will collect excess liquid. Line it with double-folded gauze, making sure that the edges of the gauze stick out. Transfer the pistachio cheese mass to the sieve, level the surface, and then spread the orange cheese mass on it.

  5. Fold the protruding edges of the cheesecloth over the top of the mixture. Place a plate on top and a weight on it, such as a can or jar, so that the Passover can squeeze out excess liquid and take on a compact consistency.

  6. Place the sieve with the mixture in the fridge overnight so that the Passover can cool down and set. The next day, carefully remove the Passover, removing the cheesecloth, and transfer it to a cake stand or plate. Finally, decorate the Passover as desired, using chocolate Easter eggs. Store in the fridge until ready to serve.

It was then mixed with butter, sugar, cream and eggs, after which dried fruit, vanilla and orange peel were added. The finished mass was placed in special wooden or ceramic forms lined with gauze and left to drain overnight. 

There are many folk beliefs and legends associated with Passover. One of them says that if Passover is not perfectly smooth, it may be a harbinger of difficulties in the coming year. Another story says that the first spoonful of Passover should be consumed by the head of the family, which was to ensure prosperity and well-being for all household members. Today, Easter Passover is still popular. In many families, it has become an element of the holiday table, regardless of religion. 

There are also modern versions of Passover, such as versions with chocolate, nuts or exotic fruits, which enrich the classic recipe. Regardless of the version, the Easter Passover remains a symbol of joy, rebirth and community, uniting generations in festive celebration.
