Easter Cake with Cotton Candy - Sweet Idea

Ingredients
Dough ingredients
- 4 eggs
- 200 g butter
- 150 g powdered sugar
- 150 g cake flour
- 100 g potato flour
- zest and juice of 1 orange
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Icing ingredients
- 1/2 cup powdered sugar
- 2 tablespoons of orange juice
Additionally
- a small package of cotton candy
- chocolate eggs
- colored sugar sprinkles
Instructions
Preparation of the dough
Melt butter and cool to room temperature. Add orange juice and zest, set aside.
In a large bowl, beat the eggs with the sugar and vanilla extract until light and fluffy.
In a separate bowl, sift flour, potato flour and baking powder, mix. Add the mixture to the beaten eggs and mix briefly at low speed, until a uniform dough is obtained. Pour in the butter, mix until combined.
Transfer the dough to a buttered and breadcrumb-sprinkled cake tin. Bake at 170°C for 45 minutes (until a toothpick comes out clean). After baking, cool in the cake tin, then carefully remove.
Preparing the icing
Sift the powdered sugar into a bowl to avoid lumps. Add the orange juice gradually, one spoon at a time, stirring constantly with a whisk, until you have a smooth, thick icing. If the icing is too thick, add a little more juice. If too thin, add more powdered sugar. Spread the finished icing immediately onto the cooled cake.
Decoration
Put cotton candy in the middle of the cake so that it sticks out slightly, imitating a bird's nest. Arrange chocolate eggs, sprinkle everything with sugar sprinkles.
