Easter brioche bread with raisins and icing

Easter brioche recipe
Ingredients
Ingredients for the dough
- 500 g flour
- 50 g fresh yeast
- 6 egg yolks
- 100 g butter
- 300 ml milk
- 100 g powdered sugar
- 1 tablespoon vanilla extract
- 50 g candied orange peel
- 50 g raisins
- a pinch of salt
Icing ingredients
- 1 egg white
- 1/2 cup powdered sugar
Additionally
- Your favorite topping or almond flakes
Instructions
Preparing the cake dough
Prepare a starter from yeast, one tablespoon of sugar, one tablespoon of milk and one tablespoon of flour. Mix everything thoroughly and set aside in a warm place until the starter doubles in volume.
Heat the milk in a small pot (so that it is warm but not hot), melt the butter.
Mix the yolks with the sugar, combine with the flour, sourdough, milk, butter and vanilla sugar. Knead the dough, gradually adding the rest of the flour, until it becomes elastic and springy. Add the raisins and orange peel to the finished dough, mix. Leave to rise for about 1 hour.
Grease the cake tin with butter, transfer the dough into it (no more than halfway up) and leave to rise again for about 30 minutes. Brush the top with egg white and bake at 150°C with convection for about 45 minutes.
Preparing the icing
Mix egg white with powdered sugar until smooth. Pour the yeast cake with icing and decorate with your favorite sprinkles.
