Ingredients

Salad ingredients

  1. 6 medium potatoes
  2. 4 carrots
  3. 1 parsley
  4. 4 pickled cucumbers
  5. 1 red onion
  6. A can of canned peas
  7. 2 tablespoons capers
  8. 10 hard-boiled eggs

Mayonnaise sauce

  1. 3 tablespoons of mayonnaise
  2. 1 teaspoon mustard
  3. Salt and pepper to taste

Decoration

  1. 3 medium potatoes
  2. 0.5 l of oil for frying fries
  3. ½ bunch of dill
  4. quail eggs

Instructions

  1. Place potatoes, carrots and parsley in a pot, cover with water and cook until soft. Once cooled, peel and finely dice. Boil eggs until hard (about 8-9 minutes), cool and peel.

  2. Finely dice the gherkins. Peel and finely chop the red onion so that it doesn't dominate the salad's flavor. Drain the canned peas and rinse them in a sieve, and gently drain the capers.

  3. In a large bowl, combine all the prepared ingredients: chopped potatoes, carrots, parsley, cucumbers, onion, peas and capers. Add mayonnaise, mustard, salt and pepper, then mix gently so that all the ingredients are evenly combined.

  4. Transfer the appetizer to a large plate and form a tall, rounded-edged mound, resembling a bird's nest. Refrigerate to develop flavor.

  5. Peel and cut raw potatoes into very thin strips, resembling thin twigs. Pat dry with paper towels to remove excess moisture. Heat oil in a wide pot or frying pan to about 180°C. In batches, throw in thin fries and fry until golden brown and crispy. After frying, drain on paper towels to remove excess fat.

  6. Arrange the fried fries evenly around the salad, creating a nest effect. You can gently press them into the sides of the appetizer to help them stick, or spread mayonnaise on the sides.

  7. Finely chop the dill and sprinkle over the top of the salad, creating a soft lining for the nest. Hard-boil the quail eggs (about 3-4 minutes), peel them and place them on the dill, imitating bird eggs.

  8. A bird's nest appetizer is a unique decoration for the Easter table, which is why it looks best as the central element of the holiday menu. It can be served on its own or as an addition to cold cuts or roasted meats. Thanks to the crispy layer of fries and the velvety interior, it will delight not only with its taste, but also with its appearance, which will introduce a note of joy and originality to the Easter arrangement.
