Cucumber Soup Ingredients

  1. 1 tablespoon olive oil
  2. 1 small onion
  3. 1 carrot
  4. 1 parsley
  5. 2.5 liters of broth (e.g. vegetable broth)
  6. 3 medium potatoes
  7. 5 medium pickled cucumbers
  8. 2 tablespoons of cream 18%

  1. 4 slices of bread or toast
  2. 1 tablespoon olive oil

Preparing the soup

  1. Peel and grate the carrot and parsley, finely dice the onion. Heat the olive oil in a pot, add the grated vegetables and fry over medium heat, stirring until they become glassy and soft. Lightly salt and fry for about 3 minutes, stirring regularly, so that the ingredients brown evenly and release their flavor.

  2. Pour hot broth into the fried vegetables, mix thoroughly, then bring to a boil. Meanwhile, add peeled and diced potatoes. Cook for another 15 minutes, until potatoes are soft.

  3. Grate the pickled cucumbers and add them to the soup. Mix everything together and cook for about 20 minutes, until all the ingredients are thoroughly combined. After that time, remove the pot from the heat and set aside for a moment to let the flavors meld.

  4. In a separate bowl, prepare the cream to whiten the soup. Mix the cream with a few spoonfuls of hot soup broth, stirring vigorously to prevent curdling. Slowly pour the cream into the pot, stirring the soup constantly to distribute it evenly. Season with salt and pepper to taste.

  5. Finally, sprinkle the soup with chopped dill, which will add freshness and additional aroma. Serve hot, as a filling and aromatic meal.
