The Chinese noodle salad combines a variety of textures and flavors: noodles, fresh vegetables, velvety tahini sauce and slightly salty peanuts. It is quick to prepare, yet impressive and full of nutrients. The traditional Chinese noodle salad can be served as a stand-alone dish, but it also works well as an addition to dishes inspired by Asian cuisine. It can also be served with grilled tofu or shrimp. Salad ingredients

  1. 2 packages of instant noodles (without spices)
  2. 1 red pepper
  3. 1 green pepper
  4. ¼ head of red cabbage
  5. 1 medium carrot
  6. 6 tablespoons lightly salted peanuts
  7. 4 tablespoons coarsely chopped fresh cilantro
  8. 2 tablespoons white sesame seeds

Tahini sauce

  1. 2 tablespoons of tahini paste
  2. 1 clove of garlic
  3. 1 tablespoon lemon juice
  4. 1 tablespoon olive oil
  5. ½ cup of boiled lukewarm water

Instructions

  1. Break the noodles from the instant noodles into smaller pieces and place them in a large bowl. Pour hot water over them for 5 minutes to soften them slightly, while still retaining their elasticity. After that time, drain, rinse with cold water and set aside to cool.

  2. Wash the red and green peppers, remove the seeds and cut into thin strips. Chop the red cabbage very thinly so that it is not too hard and combines well with the other ingredients. Peel the carrot and cut into thin strips.

  3. Peel and finely chop or press the garlic. In a small bowl, mix the tahini paste with the lemon juice, olive oil and water. Add a pinch of salt and mix thoroughly until the sauce is smooth and creamy. If necessary, add more water if the sauce seems too thick.

  4. Place the prepared pasta, chopped vegetables and peanuts on a large platter. Add the chopped cilantro and pour the tahini sauce over everything. Mix thoroughly so that all the ingredients are evenly covered with the sauce.

  5. Sprinkle white sesame seeds on top, which will add crunch and emphasize the sesame flavor of the salad. You can also add an additional portion of chopped cilantro and peanuts. The Chinese noodle salad tastes best freshly prepared, but you can also chill it in the refrigerator for 20 minutes to let the flavors blend.
