Chinese Chicken Salad - Easy and Delicious

This chinese chicken salad is a perfect combination of Asian inspirations with a light and filling dish. Thanks to the use of noodles from Chinese soups and crunchy vegetables, the salad gains a unique texture. The boiled chicken fillet makes it a full-value meal. A unique element is the juicy orange slices, which introduce sweetness and break the intense flavor of soy sauce and rice vinegar. Finely chopped chili pepper gives the whole thing a light spiciness, and white and black sesame seeds enrich the salad with a nutty flavor.

Ingredients
Salad ingredients
- 1 pack of instant noodles (without spices)
- 1 chicken fillet
- ½ head of iceberg lettuce
- 1 medium carrot
- ¼ head of red cabbage
- 1 orange
- 2 tablespoons chopped chives
- 1 tablespoon white sesame
- 1 tablespoon black sesame seeds
Sauce ingredients
- 2 tablespoons of soy sauce
- 1 tablespoon rice vinegar
- ½ finely chopped chili pepper
- 1 teaspoon of honey
Instructions
Wash the chicken fillet, remove the membranes and place in a pot of salted, boiling water. Cook over medium heat for about 20-30 minutes, until the meat is fully cooked and soft. After cooking, remove, set aside to cool, then cut into thin strips or tear into small pieces with a fork.
Break up noodles from instant noodles into smaller pieces and pour hot water over them for about 6 minutes, until they soften slightly but remain springy. Then drain and set aside to cool.
Shred the iceberg lettuce into thin strips. Peel the carrots and cut into thin strips. Finely chop the red cabbage so that it is not too hard.
Peel the orange, remove the white membrane and divide into segments. Cut each segment in half so that it combines better with the rest of the ingredients.
In a small bowl, combine the soy sauce, rice vinegar, finely chopped chili pepper, and a teaspoon of honey and mix thoroughly until combined.
Place chopped iceberg lettuce, carrots, cabbage and prepared pasta in a bowl. Add pieces of cooked chicken and orange segments. Pour the prepared sauce over everything and mix thoroughly so that the ingredients are evenly covered with the aromatic dressing.
Finally, sprinkle the salad with white and black sesame seeds and chopped chives. You can also add an extra pinch of chili if you like it spicier.
