A chickpea salad for work based on quinoa, chickpeas and fresh vegetables is a perfect idea for a quick and filling meal that provides energy for the whole day. Fresh peppers, aromatic greens, delicate quinoa and crunchy chickpeas create a combination that goes perfectly with a simple dressing of olive oil and lemon juice. The addition of chili pepper gives it a spicy touch, but you can adjust the amount to your own preferences. Because the salad does not contain heavy sauces or ingredients that quickly lose their freshness, it is perfect for packing into a lunchbox and taking to work. This quick salad for work can be prepared in advance and stored in the fridge. The flavors will then blend well and the salad will gain in intensity.

Ingredients

  1. 100 g quinoa
  2. 1 can of chickpeas
  3. 1 red pepper
  4. 3 tablespoons of dill
  5. 3 tablespoons of parsley
  6. 0.5 small chili peppers
  7. 2 tablespoons olive oil
  8. Juice from ½ lemon
  9. Salt and pepper

Instructions

  1. Rinse the quinoa under running water using a fine sieve. Boil about 200 ml of water in a pot and add the rinsed quinoa. Cook on low heat for about 15 minutes, until the grains have absorbed the water and become soft. Once cooked, remove from heat, cover and leave for a few minutes to reach the ideal consistency. Then cool.

  2. Drain the chickpeas and rinse them under cold water. If using dry chickpeas, soak them overnight and then cook until soft.

  3. Wash the pepper, remove the seeds and cut into small cubes. Finely chop the chili pepper, removing the seeds if you want the salad to be less spicy. Wash the dill and parsley thoroughly, dry and finely chop.

  4. In a bowl, mix the cooked and cooled quinoa, chickpeas, chopped peppers, chili and chopped herbs. Season with salt and pepper to taste, drizzle with olive oil and lemon juice. Mix thoroughly so that the flavors are evenly distributed.

  5. Chickpea salad is a great idea for a work lunch, because it stays fresh for several hours. It can also be eaten as an addition to roast chicken, grilled halloumi cheese or salmon, which will make it even more filling. Thanks to its simple composition and natural ingredients, it is an ideal option for people who care about a healthy diet and are looking for light, yet nutritious meals for everyday use.
