Chicken salad recipe with pasta
Ingredients
Salad ingredients
- 150g penne pasta
- 1 medium chicken fillet
- 1 small head of romaine lettuce
- ½ teaspoon of salt
- ½ teaspoon of pepper
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 tablespoons grated parmesan
Sauce ingredients
- 3 tablespoons of natural yogurt
- 2 tablespoons mayonnaise
- 1 clove of garlic
- Salt and pepper
Instructions
Cook 150g of penne pasta in salted water according to the instructions on the package, preferably al dente, i.e. slightly firm. Once cooked, drain and rinse with cold water to stop the cooking process. Then set aside to cool completely.
Remove any membranes from the chicken fillet and cut into thin strips. In a bowl, mix salt, pepper and smoked paprika, then rub the pieces of meat with them. Heat olive oil in a pan and add butter so that the meat is juicy and has a delicate buttery taste. When the fat is hot, add the chicken and fry over medium heat for about 5-7 minutes, stirring occasionally, until the meat is golden and cooked through. After frying, set aside to cool slightly and cut into smaller pieces.
Wash the romaine lettuce under running water and pat dry with paper towels. Then cut into smaller pieces or tear with your hands.
Peel the garlic and press it through a press or chop it finely. In a bowl, mix the natural yogurt with mayonnaise, add the garlic, season with salt and pepper to taste. Mix everything thoroughly so that the ingredients combine and create a creamy sauce.
Place the cooled pasta, fried chicken and chopped romaine lettuce in a bowl. Mix all ingredients gently, then pour the prepared sauce over them and mix again to coat thoroughly.
Sprinkle the salad with grated parmesan cheese on top, which will add intense flavor and emphasize the whole composition. You can also decorate it with an additional pinch of smoked paprika to enhance the flavor.
