- 80 g potato flour
- 1/2 cup of cream 36%
- 2 teaspoons of vanilla extract

Instructions
Preparing the cake base
Grind the biscuits into fine sand using a food processor or other kitchen appliance. Then add the melted butter and mix thoroughly until the mixture is uniform and slightly moist. Spread the prepared cookie mixture evenly on the bottom of a rectangular baking tin measuring 25 cm x 40 cm, previously lined with baking paper. Pat everything down thoroughly and press down so that the bottom is compact and even. Such a prepared bottom will be the ideal base for further layers of cake.
Preparing the poppy seed layer
The finished poppy seed mass should be thoroughly mixed so that the ingredients are evenly distributed. Then add eggs to the mass, preferably at room temperature, which will allow for better combination of ingredients. Beat them in one by one, mixing after each addition so that the mass becomes smooth and uniform. The next step is to add semolina, which will make the mass more compact and maintain the right consistency during baking. All ingredients should be gently but thoroughly mixed to avoid lumps. Put the prepared poppy seed mass on the previously prepared biscuit base, spread it evenly using a spatula or spoon. Smooth the surface so that the cake looks aesthetically pleasing and bakes evenly in the oven.
Preparing the cheese layer
The oven should be preheated to 180°C to be ready to bake the cake. In the meantime, prepare the cheese mass. In a bowl, beat the eggs with the sugar and vanilla extract until light and fluffy, it is best to do this with a mixer at high speed so that the ingredients are well aerated.
Then gradually add the cream cheese in portions, reducing the mixer speed to medium. Mix each portion thoroughly to obtain a smooth consistency. When the cottage cheese is already combined, add the potato flour and cream. Mix everything at low speed only until the ingredients combine into a uniform mass.
Gently pour the prepared cheese mass onto the previously prepared poppy seed layer, spreading it evenly over the entire surface. Place in a preheated oven and bake for about 1 hour, until the cheese mass is golden and set.
After baking, remove the cheesecake from the oven and leave to cool. Before serving, you can sprinkle it with powdered sugar, which will add charm and a delicate sweetness.
