Cheese Salad - tasty salad for a party and for dinner

Cheese salad with leek is a traditional and simple salad, perfect for a party or as an addition to dinner. Boiled potatoes give it a velvety texture, and Gouda cheese enriches the whole. The salad is complemented by a mayonnaise and cream-based sauce, which emphasizes all the flavors and gives it a pleasant smoothness. This recipe for cheese salad is suitable for both everyday and more elegant occasions, being a great addition to grilled meats, minced cutlets or roasted chicken.

Ingredients
- 1 large leek
- 3 medium potatoes
- 100 g gouda cheese
- 2 tablespoons chopped fresh dill
- 2 tablespoons mayonnaise
- 3 tablespoons of cream 18%
- Salt and pepper to taste
Instructions
Wash, peel and cook potatoes in salted water until soft. Cooking time depends on the size of the potatoes, but is usually around 20 minutes. Be careful not to make them too soft, they should retain their structure so they don't fall apart in the salad. After cooking, drain, leave to cool, then cut into cubes.
Wash the leek thoroughly, removing any dirt that may be between the layers of leaves. Cut off the green, hard part and leave the white and light green parts, which are more delicate in taste. Slice the leek and place in a bowl. To soften the intense flavor and sharpness of the leek, blanch it in boiling water. Simply pour hot water over it, leave for a minute, then drain thoroughly and leave to cool. This process will make the leek softer and more tender, while retaining its characteristic flavor.
Cut the gouda cheese into cubes. It is worth choosing a good quality cheese that has a slightly creamy but compact consistency, thanks to which it will combine well with the other ingredients. A long-matured gouda will be good for this recipe.
In a bowl, mix mayonnaise with sour cream, seasoning with salt and freshly ground pepper to taste. The sauce should be velvety and not too thick, so that it evenly covers all the salad ingredients. You can also enrich it with a little lemon juice for additional freshness.
Place the sliced potatoes, blanched leek, Gouda cheese and chopped dill in a large bowl. Pour the prepared sauce over everything and mix gently so that all the ingredients are evenly combined but not crushed.
Chill the salad in the fridge for 30 minutes to allow the flavours to meld and gain depth. Before serving, you can sprinkle it with fresh dill to enhance the flavour.
