Celery salad - light and crispy

Celery salad is a crunchy and flavorful vegetable. Combined with delicate tuna in olive oil, white beans, expressive capers and aromatic chives, it creates a tasty and filling salad. - ½ bunch of celery
- 2 cans of tuna in olive oil
- 1 can of canned white beans
- 3 tablespoons of capers
- 3 tablespoons finely chopped chives
Dressing
- Olive oil from drained tuna
- Juice from ½ lemon
- Salt and pepper to taste
Instructions
Wash the celery stalks under running water to remove any dirt. Then pat dry with paper towels and cut into thin slices to preserve their crunch and delicate flavor.
Remove the tuna from the cans and drain in a sieve, reserving the olive oil, which will serve as a base for the dressing. The fish should be crushed with a fork into smaller pieces, but not completely broken up, so as to maintain its structure.
Drain canned white beans in a sieve and rinse under cold water to remove excess salt and brine. Leave to drain thoroughly.
Remove the capers from the brine, and if they are large, you can finely chop them. Wash the fresh chives thoroughly, dry them and chop them finely.
In a bowl, mix the tuna oil with the lemon juice, season with salt and pepper to taste. The dressing should have a slightly sour and distinctive taste, so it is worth adding the lemon gradually and tasting so that it does not dominate the salad.
In a bowl, mix the chopped celery, drained beans, tuna, capers and chives. Pour the prepared dressing over everything and mix gently to combine the ingredients evenly.
Celery and tuna salad tastes best with crispy bread, such as baguette, garlic croutons or ciabatta. Thanks to the protein content from the tuna and beans and healthy fats from the olive oil, the salad is not only tasty but also nutritious.
