  1. 200 g carrots
  2. 2 eggs
  3. 1.5 cups of wheat flour
  4. 0.5 cup oil
  5. 100 g walnuts
  6. 2 teaspoons baking powder
  7. 1 cup natural yogurt
  8. 0.5 cup cane sugar
  9. 2 teaspoons of cinnamon

  1. 100 g powdered sugar
  2. 100 g of Philadelphia cheese
  3. 50 g butter

Preparing the carrot cake

  1. Peel the carrots with a vegetable peeler or sharp knife, then grate the carrots finely. The fine grating will release more flavor and aroma, and will also combine better with other ingredients.

  2. Place flour, baking powder, sugar and cinnamon in a large bowl. Mix all dry ingredients thoroughly to combine evenly, which will allow for better combination with wet ingredients in the next stages of preparing the dough.

  3. In another bowl, place the yogurt, beat in the eggs, preferably at room temperature, which will make it easier to combine them evenly with the other ingredients. Pour in the vegetable oil and add the grated carrot. Mix all the ingredients gently with a whisk until they combine into a uniform mass. Do not mix too vigorously, so as not to introduce unnecessary air.

  4. Add the previously prepared wet mixture to the bowl with dry ingredients. Mix everything using bottom-up movements, which will help maintain a light dough consistency.

  5. Place the walnuts on a chopping board and chop them lightly. Then add them to the previously prepared dough, mix gently so that the nuts are evenly distributed in the mass. Thanks to the addition of walnuts, the carrot cake will gain a pleasant texture and a characteristic, expressive taste that perfectly matches the rest of the ingredients.

  6. Put the prepared dough into a small 20 x 20 cm baking tin, previously greased with butter and sprinkled with flour to prevent sticking and to make it easier to remove the finished cake. Put the tin in the oven preheated to 180 C and bake for about 45 minutes, check at the end of baking if the cake is ready.
