Almond cake - Perfectly moist and flavorful

Recipe for almond cake
Ingredients
- 6 eggs
- 150 g butter
- 400 g ground almonds
- 100 g whole almonds
- 200 g powdered sugar
- 3 teaspoons baking powder
- 1 teaspoon vanilla essence
- 2 teaspoons of almond oil
Instructions
Place eggs, sugar and soft butter in a bowl. Mix ingredients at medium speed for a few minutes until the mixture is uniform and slightly fluffy.
Add almond flour mixed with baking powder to the mixture. When adding dry ingredients, mix at low speed to avoid unnecessary aeration of the mixture. Add vanilla essence and almond oil, which will give the cake a characteristic aroma. Mix briefly until you obtain a smooth dough with a uniform consistency.
Grease the cake or loaf tin thoroughly with butter, making sure to cover all the nooks and crannies. Then sprinkle the inside of the tin with breadcrumbs, removing any excess breadcrumbs so that the cake has an even surface after baking.
Transfer the finished dough to the prepared form, spreading it evenly and smoothing the surface with a spatula or spoon. Sprinkle the top of the dough with lightly chopped almonds.
Preheat the oven to 170°C (top-bottom function). Place the baking tin with the dough in the preheated oven and bake for about 45 minutes. Do not open the oven during baking so that the dough does not fall.
After 45 minutes, check with a toothpick whether the cake is baked, turn off the oven, but leave the cake in for another 20 minutes to cool down slightly and not lose its structure. Then remove the form from the oven and place on a wire rack to cool completely.
